Steamed Bibingka with quezo and salted egg

A type of rice cake cooked in a steam process...A Filipino delicacies called in tagalog kakanin ,it's made of rice flour and coconut milk..added with cheesy toppings and salted egg..

you can enjoy it with or without grated coconut ..

Steamed Bibingka ( Rice cake)

Ingredients .....

3 cups Rice Flour not the sticky one
2 cups water
2 cups coconut milk
1 1/2 cup washed sugar
2 salted egg
1 cup cut into small cubes (Cheese)
2 tsp Baking powder

How to make the steamed Bibingka...

In the mixing bowl..put the 3 cups of Rice flour

Add the 2 cups of Coconut milk...mix the ingredients together...check if more liquid is needed to pour..and then add the water as necessary  as it  needed.

put 2 tsp of baking powder..then mix them together

add the sugar ..according to your taste ..i used 1 1/2 cup of it

then we can add 1 raw egg or as more as you want ..2 to 3 is enough..i used one only..

after we mixed all the ingredients and reached the creamy texture ...brush the baking tray with butter or oil.
you can bake it using cup cake size ....

pour all the mixture into the baking tray..

Get ready for the Steamer...and steam for about a minutes or adjust time as necessary  as it needed.

make sure you cover it with cheese cloth to have good results..

after a few minutes ..you check it..and when they become solid..it's ready to add the toppings

place the salted egg..

sprinkle the cheese..fill the entire top if possible

cover it again for few minutes to melt the cheese..

then in a few minutes ..here they are....just be careful when taking it out of the baking tray..coz i failed ha ha ha..

but still they're yummy and perfectly done..Bibingka is ready to eat
